MATT’S SPICY SRIRACHA RICE
I made this sriracha rice to help fill in a gap in my Honey Lime Chicken recipe. The first time I made that dish it was made with sweet coconut lime rice and it was just too similar to the chicken. Instead, I wanted to clash the lime and help the spicy cut through the acid of the lime.
ENTER THE SPICY SRIRACHA RICE
Rice is one of the most versatile foods out there, the rice will easily take on the flavors it was cooked in and we use that to our advantage here to make a really well-rounded side dish. We cook the rice in chicken brother and a bit of sriracha to give it a perfect spicy flavor match to any chicken dish. Add some cilantro near the end of the rice cooking to add an extra explosion of flavors.
WHAT IF I DON’T LIKE SRIRACHA?
Gasp! Not everyone is keen on the flavor of Sriracha but still likes the spice kick. To adjust you can make it with the same amount of chicken broth and add in 1tsp Crushed Red Pepper flakes or 2tbsp of Sambal Olek (Thai chili sauce) in place of the sriracha. Doing that will avoid the unique flavor the sriracha has but will still maintain the spicy rice kick.
WHAT CAN THIS PAIR WITH?
This rice goes with any sweet or acidic (think lemon/lime) chicken or fish perfectly. I usually make it and serve the protein on top of a small rice bed. That way you can get all the flavors in one bite. That is where this rice really shines. In a medium saucepan, pour add all the chicken broth and sriracha, heat on high until boiling. |

Once boiling, add all the rice, stir and cover. Cook on low heat for 10 minutes. |

After 10m of cooking, add cilantro to rice and cook for another 5 minutes or until water is absorbed. |

Remove from heat, fluff with a fork, and set aside covered until ready to serve. |
